Description: Gluten free doesn’t have to hold back the chocolate lovers out there! Indulge in delicious double chocolate muffins topped with chocolate chips. To help gluten free guys and gals this Valentine’s Day, Udi’s Gluten Free Foods has developed delicious, fun gluten free recipes that use their products instead of gluten-filled counterparts. Check out the recipe for our Gluten Free Cake Pops below and for more, visit: www.udisglutenfree.com. Recipe: Prepare butter cream frosting. Remove Udi’s muffins from container and crumble by hand or with food processor until very fine crumbs are formed. Add ¾ cup butter cream to the crumbs and mix until pliable and spongy but not runny. If the cake mixture is dry add frosting until desired consistency is reached. Cover and place mixture in refrigerator overnight. (Mixture can be stored for up to three days.) Line 11” x 13” baking sheet with parchment paper. Remove mix from the refrigerator and form into small balls, place balls on parchment paper 1” apart. Refrigerate for 1 hour. In the mean time, place chocolate candy disks in a small microwaveable bowl. Place in microwave and melt in 1-minute increments, stirring in between, until smooth and runny. Remove cake balls from refrigerator and dip 1 lollipop stick into melted chocolate and push into each ball. Dip each cake pop into the chocolate, let excess chocolate drip off and then push each lollipop into Styrofoam to finish drying. Dust with chocolate sprinkles while setting. Repeat until all cake pops are finished.
