Description: Las Rocas 2012 Rosé hints at the enticing aromas of raspberry and strawberry. Clean and fruit forward, this Rosé is crafted from Garnacha grapes grown in our high altitude vineyards. The extreme conditions in Calatayud translate to bright red fruit flavors with a hint of spice to create a full-bodied, elegant Rosé with a fruity finish. Las Rocas wines come from the steep, rocky vineyards in Calatayud that rest at elevations of 2,500 to 3,500 feet. The grapes for this wine were selected from our Garnacha vines, which are grown in loose, rocky limestone soils. In 2012, bud break was a bit irregular, but was saved by a magnificent fruit set. A hot, dry summer led the way to a mild harvest in October, creating lively colors and concentrated flavors in the grapes. The Garnacha grapes for our 2012 Rosé were harvested in mid-October at low temperatures. This rosé was made using the saignee method; after a brief maceration of eight hours, the juice was drained from the skins. Fermentation occurred in stainless steel tanks for 12 days at a maximum temperature of 61°F. Following fermentation, we racked the wine and allowed it to settle for 36 hours before bottling.
