At the 6th annual Pebble Beach Food & Wine Festival, Lexus Culinary Masters Michelle Bernstein (Michy’s) and Dean Fearing (Fearing’s at the Ritz Carlton) spoiled a private reception of guests with Southern hospitality at its finest.
This one-of-a-kind dining experience celebrates the mouth-watering flavors that honor classic dishes deep from the American South.
Lucky guests discovered why Chef Dean Fearing is known as “the Father of Southwestern Cuisine” as he prepared lobster tacos, bacon-wrapped jalapeno quail, smoked pecan crusted halibut with lobster, sweet corn gravy and chicken fried tobacco Ipswich clams, plus a heritage pork chop with Brazos Valley grits and crispy okra.
Chef Michelle Bernstein showed off her true Southern style with fried green tomatoes and herb ricotta, oxtail stew sliders, duck confit with black eyed pea succotash, and banana pudding.
Appetizers paired well with Champagne Henriot “Blanc de Blancs” and Sandhi Chardonnay 2011 with the halibut. Testarossa Pinto Noir “Dr’s Vineyard” Santa Lucia Highlands 2012 was served with the duck. The pork chop paired with Somerston Vineyards Cabernet Sauvignon Napa Valley 2009, and dessert was perfect with Chateau Guiraud 1er Grand Cru Classe Sauternes 2009.
