De Gustibus Network Restaurant Review – The Best of Tuscan Food Without Leaving Florence


The draw for Florentines to come to Culinaria Bistro di De Gustibus in the chic San Frediano, in Oltrarno area, thick with houses originally built for diplomats is likely the culinary arts of chef Jacques Pachaud.  Of French origin, he has worked in some of the world’s top Japanese kitchens, among others.  With the help of his wife and De Gustibus manager, Stefania Cuda, Jacques creates an international gourmet menu.



From our sampling, this menu is an excellent reason for you, the tourist, to visit this restaurant too. 



But De Gustibus actually offers more and especially for time-strapped tourists whose vacation in Tuscany is mainly, if not wholly, centered in the city of Florence.  



Those confined to Florence don’t properly realize that if you travel beyond to greater Tuscany you will find a prevalence of food and wine from small producers who safeguard quality with unusual passion. 



Many are organic certified and many more could just as well be if they fussed with official paperwork.   In Tuscany, most farms and food production is done by families that have produced the organic way for generations. 



What De Gustibus Network does is bring these Tuscan food treasures, mainly organic, to your table in Florence. 



More, they organize special events such as tastings, cooking courses, wine and food weekend excursions and more to make the products of their dozens of small producer association members accessible. 



Speaking for his two partners who jointly manage the De Gustibus network, Tommaso Ciabini says, “There are more and more restaurants which in the last 10 – 15 years have begun to work with 0 km products.  In Italy, this was actually the norm in past decades before the advent of large retailers. 



"There are three other restaurants in Florence which, like us, are selling wine and food products besides using them in the kitchen.  But we have gone a step further:  we have created an association of small producers from whom we serve food and wine.  We select and check them through the method of ‘garanzia partecipata’, which means that consumers and producers can control the way every producer works, in every passage from the field – or the tree—to the table.  This is much better than any label or certificate.  Together with these producers we also organize events via our tour operator, De Gustibus Tours.  We think we have created a virtuous circle between the producer and consumer – and the chef Jacques!”



Dinner reservations are recommended, but lunch drop-ins are possible.
