It's not just a special occasional indulgence at Vosges Haut-Chocolat in Beverly Hills, it's a way of life that combines love, passion and boundless unceasing creativitiy of owner Katrina Markoff. No doubt as passionate about chocolate as her salon's purple walls foretell, Katrina was originally trained in Paris at Le Cordon Bleu. Her impressive resume includes working under the direction of Ferran and Alberto Adria at their world renowned El Bulli restaurant in Spain.
Vosges Haut-Chocolat's Mission represents an experiential realm of storytelling through the medium â€¨of chocolate, combined with Katrina's creative four step process; 1) the act of falling in love with beauty, curiosity or cause and the 2) Inspiration that springs from this act. Step 3) says Katrina, “The action is not just dreaming and leaving the thoughts in the clouds, but actually DOING something to physically create the idea." And lastly, Step 4 – Experience; The inspiration, ingredients and story create the final experiential interaction of each product as it is connected to you.
From the boundless collection of signature Truffles such as Oaxacan with Pasilla chillies and dried cherries, or Ambrosia with candied violet flower, and other ingredients such as pumpkin seeds, Australian macademia nuts, fennel, ginger and wasabi, just to name a few. Their Truffles are truly a work of art. Although I was not given any to sample while there, I look forward to trying them to entice you with their unique flavors at another time.
Much like the old Spanish proverb: "Las cosas claras y el chocolate espeso." (Ideas should be clear and chocolate thick.) Their La Parisienne Couture Cocoa is a rich and smooth cup a' mood lifter decadence. Not only that, it was also voted The #1 hot chocolate by Rachael Ray out of 75 contenders.
I went with their famous “Blue Bottle” brand chicory iced latte. One of the richest espressos I've had in a long time. No wonder Vosges enjoys a following of patrons who are familiar with the Blue Bottle name.
They also feature exotic candy bars; including both sugar free and gluten free varieties such as Marzipan, Black Salt Carmel and Gingerbread Toffee to name a few. I went for the gluten free Ultimate Chocolate Chip Cookie, baked daily in their kitchen on the premises. The cookie was rich and loaded with chocolate goodness that I'll not soon forget. It was perfectly crunchy on the outside and gooey-chewy in the middle. Oh, such comfort!

Go home and whip up a batch in the comfort of your own home and impress your friends with their delicious recipes.
