Viceroy Santa Monica CAST Restaurant Review - Bringing Fresh Flavors to this Breathtaking Spot

New chef, new menu, same breathtaking setting. CAST Restaurant located inside Viceroy Santa Monica recently introduced its new Executive Chef Larry Monaco and with him came an wide-ranging menu that gives you a reason to dine here. Not that you need an excuse.

CAST Executive Chef Larry Monaco wasted little time debuting his brand new menus that run throughout the day. Chef Larry incorporated all of the great ingredients that Southern California has to offer by sourcing local, sustainable and in-season proteins and produce for his menu including his brand new vegan and gluten-free menu options.

The signature dishes that Chef Larry created certainly live up to the billing. "My Grandma's Bolognese" might be the most creative Bolognese you will find in Southern California with flavor after flavor emanating from the Bolognese. When you start with short rib, sausage, ham hock and then add in veal bone marrow and finally the added richness of Parmigiano-Reggiano. Even the most die-hard Italian food aficionado will appreciate this dish.

"My Grandma's Bolognese"

If you were putting together a list of the best burgers in Los Angeles, there is no question that the Viceroy Burger would make the cut. CAST starts off with a house-blended patty that is larger than most can handle and if you order it medium-rare, you will leave a happy person. Topped with Point Reyes Toma fondue, house made pickles and 1000 Island dressing, one bite in you have all savory goodness and if you are really daring add bacon and an egg, but if you do, you might just need a bigger plate.

The rich flavors continue to come out of the CAST kitchen with the Santa Monica 310 Blonde Ale mac & cheese. This goes well beyond the typical mac & cheese as it starts with the rich cheddar sauce and combined with chilis and roasted thyme bread crumbs. The perfect date meal comes in the form of a 24 oz. bone-in ribeye. A spectacular piece of meat that really could be the focal point of the entire menu as it will take your breath away when it is served.

Chef Larry also created a vegan and gluten-free menu that is again centered around local and fresh ingredients. The salad of chicory lettuces gives you a nice burst of flavor from pomegranate seeds and then it is topped off with the unique white balsamic-pumpkin vinaigrette. You are also going to find roasted acorn squash, seared tofu and he even took care of dessert with a chocolate brulee created with chocolate tofu and topped with black pepper berries and sea salt.

Beet Salad

Finally there is no better place than CAST to enjoy a weekend brunch as the sun starts to peak in over the hotel and into the patio. The brunch menu is loaded with classics like Brioche French Toast, chilaquiles verdes along with market oysters, a beet salad or a fried chicken sandwich. You are likely to notice tray after tray coming out with green juice, make sure you order. They are loved by guests and so popular and no better way to start the day than with this seven ingredient fresh juice. The cocktail that was made for brunch at CAST is the California Incline. Imagine your favorite champagne cocktail and then make it incredibly more flavorful. Champagne, Sobieski Vodka, fresh raspberries make this refreshing, flavorful, fruity and unlike and other champagne drink you have ever had.
