Bluewater Grill Bluewater CUT Fitness Menu - Keeping You Fit with Flavor

Healthy food and great tasting food don't always go hand in hand. Bluewater Grill Executive Chef Jason Mazur teamed up with Eddie and Tamra Judge, founders of CUT Fitness to change that. The trio created the Bluewater CUT Fitness Menu that features lower-fat versions of eight sustainable seafood small plates and entrees found on Bluewater’s lunch and dinner menus.

“We’re always exited to expand the public’s perceptions of sustainable seafood and shellfish,” Chef Jason stated. “Our fitness-inspired customers will now be able to order from a special menu of low-calorie, high-protein small plates and entrees prepared exclusively for them. While all seafood offers a certain level of health benefits, this menu is perfectly suited to the athletes and exercise enthusiasts at all stages in their fitness journey.”

Bluewater Grill has always been home to an amazing lineup of sustainable fish entrees, but this new menu takes the guesswork out of making healthy choices when you dine.

The full menu is currently available at Bluewater Grill Tustin. Other Bluewater Grill, Bluewater Avalon and Bluewater Boathouse locations may offer the menu at a later date.

Small Plates

Oysters on the Half Shell
Red wine mignonette and fresh lemon
Good as an aphrodisiac

Ahi Poke Lettuce Wraps
Romaine lettuce “taco” shells, Haas avocado, English cucumber,
fresh cilantro, ginger, Bragg;s onions and sesame oil
Good for building and repairing muscle


Tuscan Kale Salad
Lacinato kale, matchstick Fuji apple, toasted peanuts
tossed with fresh lemon vinaigrette
A Superfood good for low-carb diets

Baby Spinach and Quinoa Salad
Fresh naval orange sections, toasted almonds, local goat cheese
and housemade vinaigrette
Good for endurance athletes


Grilled King Salmon
Quinoa, roasted asparagus and fresh citrus oil
Good for strength and muscle building, protein

Herbed Free Range Chicken Breast
Local spaghetti sauce, sautéed Brussels sprouts and thyme chicken jus
Good for balanced diet, proteins, carbs, healthy fats

Grilled Prime Top Sirloin
Heirloom carrots and local Swiss chard
with pickled red onion and red wine demi-glace
