Chicken in a Savory Bread Pudding
|
Chef
Steve Brown began our evening with warm, melted Brie with apricots, walnuts, and Gorgonzola cheese, wrapped in flakey, buttery puff pastry. Next I tried a yummy little chicken bite that tasted like it was almost in a savory bread pudding. The first wine I sampled was the
Bangin Red Crescendo Wine which is the red wine served by the glass. It’s a delicious Bordeaux blend of Cabernet and Malbec. Sila’s Wine Director,
Jared Hooper took us on a very entertaining journey through some tasty wine and food pairings.

Having Party Fun
|
Jared paired the Pan Seared Scallops over butternut squash risotto/pancetta bits/ and sage oil with
Piro Piccolo wine with a crispness and just the right amount of acidity to go with these creamy, buttery scallops, since acidity is what cuts through fatty or rich foods. Piccolo is Italian for sandpiper. I loved this wine. It was a nice walk between old and new worlds, according to Jared and I had to agree. The homemade goat cheese ravioli was also extremely luscious with this wine that’s more like a Blanc de Blanc, which is Chardonnay. Goat cheese is something I usually cannot stand. Yes, I know I am only one of a couple of people that dislikes goat cheese. Until tasting Frank’s scrumptious Home-made Goat Cheese Ravioli made with Soledad goat cheese, I would never even eat anything touched by goat!

For dessert Chef
Steve Brown brought us white and dark chocolate covered---rich, thick, dark chocolate cream centered candy pops. I gained a 1/2 lb. just thinking about it---but was it ever good!!
