The world famous House of Blues has fun plans for both Southern California locations on New Year's Eve. Mrs. Fish will be hosting a New Year's Eve Party with a whole lineup of bands and musicians who will be performing throughout the night, including a DJ. The cover is $55 which includes tax and gratuity. The cover will also include Signature Mrs. Fish tray passed hors d'oeuvres (sliders, ceviche etc.) from Executive Chef Greg Bernhardt. The party will be from 8 p.m. to 2 a.m. Add in that this is the only spot that you will be surrounded by a 5,500-gallon aquarium bursting with sea life (that has been raised entirely in captivity).

If you are looking a unique dining experience for New Year’s Eve, join Eats Kitchen & Bar’s inaugural New Year’s celebration at the new social center of Irvine. Executive Chef Jason Montelibano has hand-selected the four-course prix fixe menu and is putting all the stops out for a unique gastro pub-style holiday meal.  After dinner, keep the party going into the late evening by listening to DJ spun tunes and dancing. There are two seating options, 7:30 p.m., which is $60 per person, and the second seating at 9:30 p.m. which is $75 per person. The recently opened Oak Grill at Island Hotel will have Chef Marc Johnson creating a prix fixe menu to allow you to enjoy Newport Beach as you ring in the New Year. Oak Grill will offer two seatings, the first will be from 6 p.m. for $100 per person and the second is at 9 p.m. for $150 per person. Each meal will be accompanied by a choice of cocktail or a glass of Veuve Clicquot champagne.

First Course: Shared Frutti de Mare Platter with Lobster, Prawns, Oysters, Cocktail Sauce and Remoulade

Second Course: Potato Leek Soup or Baby Field Greens Salad

Old World

2 oz Hennessy V.S

.5 oz Amaro Nonino

5 dashes orange bitters

Garnish: Lemon wheel

Glass: Rocks

Method: Add all ingredients to a mixing glass with ice, stir to chill. Strain liquid into a rocks glass with fresh ice, garnish with a lemon wheel and serve.

Ginger Apple

1.5 oz Hennessy V.S

.75 oz Ginger Liqueur

.5 oz Lemon juice

2 oz Apple Cider or apple juice

1 dash angostura bitters

top with Soda

Garnish: Apple spear and ginger spear

Glass: Collins

Method: Shake all liquid except soda in a shaker tin with ice.  Strain into a Collins glass with fresh ice.  Top with Soda and garnish with an apple and ginger spear

A long night in Madrid

1.5 oz Hennessy VS

.75 oz Medeira

.25 oz grade A maple syrup

4 dashes angostura bitters

1 egg white

Garnish: Coco nib shavings, or dark chocolate

Glass: Coupe or martini

Method: add all ingredients to a shaker tin and shake without ice to activate egg white, then add ice and shake to chill.  Strain into a coupe or martini glass and shave coco nib over the top.

Warm Cocktail:

Winter Vacation

1 oz Hennessy V.S

1 oz Velvet Falernum

.25 oz Fresh Lemon juice

5 oz Hibiscus tea (hot)

Garnish: Lemon Wheel and cinnamon stick

Glass: Heat proof glass mug

Method: Add all ingredients to a heat proof glass mug and stir to combine, garnish with a lemon wheel and a cinnamon stick, serve.

Winter Vacation from Hennessy V.S

Yellowtail Sunset has provided us with the recipe to their festive “Spiced Milk”

Ingredients:

Pinch of Ground Cinnamon

Pinch of Ground Nutmeg

3/4 oz. Barbancourt 8yr

3/4 oz. Pierre Ferrand Ambre

2 oz. Egg Nog

Build: Add all ingredients above into a mixing tin.  Add ice and shake.  After shake, strain into a chilled martini coupe.

Glass: Martini Coupe

Garnish: Grated Pistachios, Short Bread Cookie

Spiced Milk from Yellowtail Sunset

THE NOG NOG

Karl's current signature seasonal sip is the Nog Nog. He makes his own almond nog and infuses it with dates, vanilla bean and sea salt. He also makes his own cinnamon syrup. Vodka is added to the almond nog and cinnamon syrup, along with banana du bresil (giffard banana liqueur) and an egg white. It's then garnished with shaved dark chocolate.

Ingredients:

1.5 oz. almond nog* (almond milk nog infused w/ dates, vanilla bean & sea salt)

1.5 oz. Loft & Bear artisanal vodka

1/4 oz. housemade cinnamon syrup

1/2 oz. banana du bresil (giffard banana liqueur)

1/2 oz. egg white

Instructions:

Dry shake (no ice) for 30 seconds. Add ice, shake and strain. Garnish with shaved dark chocolate.

Loft & Bear "Nog Nog"

UNCLE BUCK

2 oz. Loft & Bear artisanal vodka

1/2 oz. lemon

1/2 oz. cinnamon-ginger syrup

1 1/2 oz. fresh apple juice

Splash of Maine Root ginger beer

BEAR'S KNEES

Play on a traditional Bee's Knees, which is usually made with gin, honey & lemon.

Ingredients:

2 oz. mustard-infused Loft & Bear artisanal vodka

1/2 oz. fresh-squeezed lemon juice

1/2 oz. honey syrup

Instructions: Shake and strain into coupe glass. Garnish with an edible flower.
