My husband and I dined with Giancarlo Frigerio, Hotel Villa Rolandi General Manager, who along with Master Chef Fabrizio Piga, reviewed the extensive menu with us. Frigerio told us that, “We put Italian soul into the restaurant.” Piga explained that he uses top-quality fresh ingredients and slow cooking techniques while focusing on creating amazing dishes by combining flavors.

The dining experience begins even before the food arrives. Diners are treated to a panoramic view of the Caribbean Sea and the Cancun Hotels eight miles across the water.

Sometimes it is the unexpected amenity that makes an experience special. In this case, a rack was provided so that I could hang my purse and not have it touch the floor.

A specially designed brick oven is used to bake their breads and pizzas and to cook selected entrees. Warm bread dipped in oil and balsamic vinegar accompanied by a glass of Chardonnay is a great way to start a meal.

There are a dozen cold appetizers on the menu including five carpaccios. Select one with salmon, tuna, octopus or meat. You can order ceviche “Isla Mujeres” style or fish ceviche Peruvian style.

We sampled Capriccio de pulpo, thin slices of octopus in extra virgin olive oil. This tasty appetizer combines local ingredients with skillful Italian preparation

I was temped to order the Thai salad with sauteed shrimps, bean sprouts, bamboo shots, shitake mushrooms and ginger, dressed with a walnut vinaigrette and extra virgin olive oil, but was afraid I would not have room for the other courses.

As a salad lover I was particularly pleased with the combination of spinach, arugula and endive soaked in olive oil with shavings of parmesan cheese. It was light and tasty

The menu is extensive. After discussing our basic food preferences prior to the start of the meal, we left our menu in the hands of the experts. We passed on the selections of four soups, all of which sounded appetizing. Next came our pasta dish.

My husband's raviolis negros or black raviolis were stuffed with local lobster and covered with a delightful light bisque sauce

I enjoyed the homemade raviolis stuffed with wild mushrooms over a creamy Alba Truffle Sauce

An elegant presentation including the Silver Dome on the main course is part of the dining experience. I selected a meat dish as my main course and my spouse ordered shrimp.

My Rib Eye Tagliata style with a glaze of Modena Balsamic Vinegar was cooked to perfection

Fabrizio recommended his recently created Giant Shrimps Flambe' pineapple. Watching the final preparation of this entree – the flambee' -was an enjoyment on its own.

The giant local shrimp were large and flavorful. A light Rhine wine accompanied the meal.
