Libre Restaurant Review - Giving You Unparalleled Mexican Flavor

Authentic Mexican is always a favorite, but simply sticking with the classic standards isn't what Executive Chef Brian Massie does. Libre Mexicana Cantina at Red Rock Resort and Casino perfects the standard flavors but is also created dishes that offer twists and turns of what you normally expect at a Mexican restaurant and the flavor creation is unlike anything else you will find in Las Vegas.

Beginning your meal with the flawless guacamole or the bubbling queso fundido made famous at Diablo's is the best way to get your taste buds going. From there the crispy dynamite shrimp taco is going to be the way to get introduced to the flavors of Libre. Instead of a tortilla, the shrimp are placed on jicama, a contrasting texture that also allows you to take in the entire flavor that shines through from the siracha creme and avocado and it is all centered on the crispy coconut crusted rock shrimp. Served as mini-tacos that everyone can enjoy, this just might be your most memorable bite of the evening. Mini crab ceviche tacos are also tantalizing as they are prepared with fresh king crab. Finally a take on a Mexican classic is the Mexican street corn fritters that provide a great crunch and the authentic Mexican flavors of cilantro, poplano and cotja creme.

At Libre you can go with traditional tacos, burritos, including a breakfast version, fajitas and more. The signature dish of Libre would have to be the chicken machacados. Libre begins with a tender piece of chicken, pounds it into a thin piece and then grills it but what sets it apart is the flavor that it comes with. The chicken is smothered in a roasted tomatillo sauce and poblano chilies that provide a spiciness and rich flavor in every bite. Once the chicken is gone you will keep chasing the sauce with your fork, it is that good. The other truly amazing dish on the menu is the grilled salmon plate. If you love salmon this is a treat as you get a fresh and perfectly grilled salmon that has all of the moisture in tenderness locked in and then is topped of with a unique cilantro butter to go along with peppers and onions.

Dynamite Shrimp

Libre is ahead of the curve when it comes to Mexican dining as they offer a wide assortment of vegan dishes as well as a lineup of brown rice bowls. You can choose from vegan nachos, coconut ceviche that is paired nicely with crispy plantains, veggie and tofu fajita and finally grilled Portobello tacos. For those looking for a healthy alternative, the brown rice bowls come with marinated black beans, grilled corn, avocado and your choice of; chicken, grilled Mahi Mahi, carne asada or tofu. Libre has created the menu for anyone and everyone.

Chicken machacados

Libre is home to tequila and if you can't find your tequila here, well you aren't truly a tequila aficionado. From Blanco to reposado to anejo, Libre has it all and that is just the beginning. For those of you that treat tequila like a fine wine, you can try just unique tequilas as; Clase Azul Ultra, Partida Elegante and Wild Mountain Tobala just to name a few. The Libre mixologists also got the creative tequila juices flowing with a unique cocktail program that is focused on tequila. The La Granda is the cocktail to try on the Libre menu, containing Casamigos Blanco Tequila, ginger beer, mint, lime and pomegranate, the wide ranging flavors create a refreshing drink and one that even people who don't like tequila will appreciate. All the cocktails offer something unique, the Desperado combines Avion Silver Tequila with Modelo, the Heated Moment and Pepino Picante offer an assortment of heat to your cocktail and of course you can go with the classic margarita.

Carne Asada tacos

Once you make it through this food gauntlet there is only one thing left for you. Cinnamon churro ice cream sandwich and it is as amazing as it sounds. If you can't pass that churro stand when you walk by simply imagine two donut like slices of churro, then make a sandwich out of those two smothering about four inches of vanilla ice cream and then chocolate sauce to pour over the entire dessert. Have some friends for this one as you are going to have a tough time finishing this tasty monstrosity.

If you happen to be near the Red Rock on a Tuesday night there is nothing quite as tempting as the $24 all -you-can-eat tacos and all-you-can-drink tequila shots. Libre is the third restaurant from Clique Hospitality to open inside of the Red Rock and for the third time they have created a fabulous restaurant that succeeds at every turn.
