Fleur by Hubert Keller Sunday Brunch Review – Turning Brunch into an Experience

Forget everything you have ever known about the typical Sunday Brunch and enter the house of Chef Hubert Keller, which is Fleur inside Mandalay Bay Resort and Casino. Always inventive with his menu, brunch was a nice reason for Chef Hubert to reinvent some breakfast classics while giving you a chance to pair these delicacies with some equally flavorful beers and cocktails to get your Sunday started.

Bacon infused Vodka

You can’t go wrong starting your Sunday with the aptly named Hangover Angus Short Rib Benedict. The short rib is slowly cooked to a tenderness that leaves it melting in your mouth. And, although it would be perfect by itself, the totality of the dish makes this memorable: there is a jalapeno-based hollandaise sauce that gives it a subtle sense of heat, and Chef Hubert finishes it off with a red wine jus. While that might sound like a lot going on in one dish, it all comes together deliciously, and sneaking everything in one bite, including the crunchy potato cake, makes for simply the best version of eggs benedict in all of Las Vegas.

Carnitas Hash

The only thing that could make this better is ordering a Bloody Mary from the build your own Bloody Mary cart that provides tableside service. Don’t fool yourself when you hear it is build your own Bloody Mary and think it is simply how spicy and how many vegetables you might toss in. This is Fleur and that means you aren’t getting just a Bloody Mary, you are getting an experience. You can start off with some bacon infused vodka, then toss in a perfectly cooked piece of bacon and, if you like, how about some shrimp? This Bloody Mary could turn into a meal as much as a drink, but you can be assured whatever you choose, it will be exactly how you like it.

Bagel with Smoked Salmon

The other memorable dish on the brunch menu that combines two meals effortlessly is the Carnitas Hash. You will find flavorful roasted pork along with poached eggs, both of which are given that Mexican dish feel with a tomatillo salsa.  On the straight breakfast side of the menu, although it might fit as a dessert, the red velvet pancakes are light and plentiful.  The dessert flavor of the red velvet comes through and the rich cream cheese butter puts it over the top, making the Maple syrup optional. If you are really hungry and want a little of everything, try the Fleur tasting. You are going to get the Hangover Angus Short Rib Benedict, red velvet pancakes, and an omelet to go with one of the crispy potatoes.  If you are looking for variety, skip the buffet and do the Fleur tasting; you will be much happier.

Fleur has teamed up with Mandalay Bay Director of Food & Beverage and Nevada’s first female certified Cicerone Sarah Johnson to put together an eclectic beer selection that has been paired up with selections on the menu so you know you are getting the perfect beer to match your brunch selection. This is brunch, so a burger is an option and when the HK Burger is on the menu, it’s a very good option. A 50/50 blend of Kobe and Angus beef tells you the patty is about as good as it gets and then it is topped with sautéed spinach and blue cheese – a richness that can only be complimented by the recommended Dog Fish IPA. Take advantage of Chef Hubert’s love of beer and Sarah’s expertise in unearthing unique beers by treating yourself to a few beers off the Fleur menu while you are enjoying brunch.

Tableside Bloody Mary Cart

While the options for brunch in Las Vegas have become dizzying, Fleur is simply one of the restaurants that must be experienced in Las Vegas. Chef Hubert is not only one of the best chefs in Las Vegas, but he is often in Fleur, meaning you can expect his deft handiwork to be part of your experience. Brunch, dinner or just for a beer and appetizer, you are never going to leave Fleur disappointed or hungry.
