Chayo Mexican Restaurant + Tequila Bar at The Linq complex on the famous Las Vegas strip offers tourists and locals alike good mexican cuisine and a view of the latest local attraction, The High Roller Observation Wheel.
Chayo is a new concept in Mexican dining, combining a DJ, mechanical bull, a vast tequila and cocktail selection and a blend of authenic and innovative Mexican fare. It's a place to enjoy drinking, eating, and people watching in a great location.
The Linq is being developed by Caesars Entertainment and will consist of a high energy retail, dining and entertainment complex anchored by the world’s tallest observation wheel known as The High Roller.
Chayo's menu consisting of modern and traditional Mexican food and was developed by Executive Chef Ernesto Zendejas. It features small bites known as Tapas along with the traditional main courses such as chicken fajitas.
You can begin your meal with the Tapas. I savored the guacamole served on pork rinds, but you can also order it on tortilla chips. The selection of tacos include crispy fish with cilantro mayo, maine lobster with chipotle mayo, grilled chicken with chipotle sauce, carnitas with mexican herbs or grilled ribeye with cascabel sauce ($12).
I didn't get to taste the quasadilla frita made with caxaca cheese and poblano peppers but that one is surely on my return list. Tostada selections include chicken, pulled pork, cheese and a bass ceviche with mango and avocado.
Of course there is the traditional tortilla soup but the cilantro cream soup sounds tempting as well. The carnes or meat selections include an 8 ounce filet ($32), a 14 ounce boneless Ribeye ($32) or a New York Strip which is served with Yucca Fries and Chimichurri ($28). Each dish is served with a side of flour tortillas, spring onions, grilled cactus leaves, black beans, Mexican street corn and cilantro rice.
Other options include Ahi Tuna, Grilled Chicken, and a Pork Tenderloin as well as the traditional Fajitas which can be ordered with Shrimp, Lobster, Chicken, Filet, or Vegetarian. A children's menu is available as well.
In addition to the traditional dessert menu, you might want to check out the liquid desserts, The Grownup Horchata is made from Cruzan Pineapple Rum and Horchata Liqueur with Coconut Cream ($14). They also have a late night menu lovingly referred to as the “drunk menu” with options ranging from $9 to $17.
Bartenders can utilize over 50 different tequilas in the preparation of your adult beverage. I sampled a "Puncho Villa" – just for literary sake of course. The cocktail consists of Tanteo jalapeno tequila, fresh lime juice, fresh watermelon juice, muddled cucumber and fresh mint. It was spicy, but refreshing.
Another appealing option was the Buenos Dias, a combination of Ciroc peach vodka, Red Bull and fresh pineapple juice. In addition to the specialty cocktails, available to order by the glass or pitcher, Chayo also offers wines by the glass, priced from $7 to $18, and an array of domestic beers.
A unique mechanical bull, nicknamed “Chayo” sits in the middle of the dining room waiting for brave patrons to mount it. The bull along with a DJ adds to the party atmosphere of the restaurant.
Chayo is definitely an enjoyable place to drink and eat in an energy-charged environment. A semi-private dining room is situated on the main floor, and accommodates up to 40 for a seated meal, while all of Chayo accommodates up to 320 guests.If you want a quiet romantic meal, look for other options, but if you want modern Mexican food and fun, go for it.
