SW Steakhouse and
Executive Chef David Walzog took the classic steakhouse menu and setting, put it in a martini shaker and shook it up, and what came out was something that is truly amazing and original at the
Wynn Las Vegas.

The two things that will strike you about the
SW Steakhouse are the menu and the atmosphere. The atmosphere is more bright and vibrant than the typical steakhouse and looks to be a favorite for families and friends celebrating in
Las Vegas. The second thing you will notice is the menu and all the original dishes that have been created by
Mr. Walzog.

Black Truffle Foie Gras Terrine

You will see his creativity immediately, as the starter dishes give you some well thought out and unique choices. The Kobe Beef Carpaccio is one of the must-try dishes on the menu. The flavor that is packed in these thinly sliced layers of beef is really unmatched as a starter. The other starter that will take you by surprise is the black truffle foie gras terrine as the subtle sweetness to the dish puts a pleasant twist on this classic.

Herb Crusted Colorado Lamb Chop

This being a steakhouse, if you come in for a steak you will walk out extremely happy. The 20-ounce bone-in rib eye is the favorite choice among diners and the tenderness and flavor that is brought out in such a large piece of meat will make you realize why this is such a favorite. All of the beef is aged Nebraskan Corn Fed beef that is 100% USDA Prime, whether it is the New York Strip, the filet mignon or whichever steak or chop you choose, the quality will come through in the taste. The secret again is the twist that Mr. Walzog puts on his sauce. Each steak comes with three sauces: the classic béarnaise, the
SW original, the house mixture of the classic steak sauce and finally the jalapeno tropical fruit sauce. This one demands a little leap of faith as you might not see the the combination of meat with a sauce with a little kick, yet also staying on the sweet end of the scale. Yet somehow
Mr. Walzog realized this would be the perfect pairing to his steak and it truly does only enhance the meat and will leave you wanting the recipe.

You might have a hard time finding the steak and chops portion of the menu, because the main course menu leaves you with so many choices that you are going to have to send your waiter away a few times and as you ponder what to choose. The dish that was served as close to perfection as you can get was the seared Hawaiian tuna. What makes a dish as great as this are not just the combination of a perfectly prepared tuna and the blending of the sweet along with crispy textures to accompany it, but the fact that even if you don’t love tuna, you will love this dish. The braised “Kobe Style” beef short ribs, give you all the flavor and ruggedness of a rib, while keeping the delicacy of a Kobe beef as each bite goes down like melted butter. The tender herb crusted Colorado lamb chop is prepared rare and succulent, but what really makes the dish are the hidden flavors in the crust around the lamb chop as again
Mr. Walzog found the perfect ingredients to make a great dish, a spectacular dish.

Mr. Walzog is always updating and changing his menu, but one that sits atop the menu is the seafood spectacular, giving you a chance to have a variety of seafood dishes including; Maine lobster, tuna tartar, jumbo shrimp, oysters and lobster salad. If you love seafood, you won’t find a better combination anywhere in one sitting.

Funnell Cake

The dessert menu leaves you with some incredibly difficult choices, but it really comes down to two items, the soufflé and the funnel cake. At first glance, you might say to yourself why on earth would I order a funnell cake? Let me say that you should order this just for the pure beauty of the presentation, but secondly if you have ever had a funnel cake and loved it, and who hasn’t, this dish takes that carnival treat to a new level. Several small fresh funnell cakes, served with three toppings to go along with fresh strawberries make for a perfect finish to your evening. The dark chocolate soufflé is the other clear choice in this battle to finish your dinner. The soufflé is an extremely tough dessert to prepare to perfection and the
SW pulls that first trick off, but the secret that makes this dish truly perfect are the the wild German cherries served on the side adding an understated fruity sweetness to the dessert
