It might be trendy for celebrities to invest in restaurants. What usually isn't trendy is for them to actually give the restaurant more than their name. This is not the case with Eva Longoria Parker, as she has given her flavor, style and heart to Beso Las Vegas.
Eva teamed up once again with award-winning chef Todd English in creating the menu for Beso Las Vegas after collaborating on the menu of Beso Hollywood in 2008. While the menu certainly has the Todd's flavoring, Eva made sure that it also had her own signature, featuring some of her family recipes, including the guacamole, tortilla soup and Chili Rubbed Skirt Steak.
Eva's guacamole and chips are a great way to begin the evening, whether you are at the bar or at your table. This dip is served very thick and rich. There are a number of great starters including a crispy crab cake and seared foie gras, but you can't go wrong with Eva's tortilla soup. The presentation of the soup is fabulous, you are given a bowl with all of the ingredients and then your waiter pours the broth from a different dish into the bowl, combining all of the ingredients. This is the perfect way to keep everything crisp and fresh and the flavor of the soup is very robust. It does not have an abundance of spiciness that you normally find in tortilla soup, but the touch of sour cream and salsa verde really brings out the flavor of the soup.
The seafood portion of the menu really separates Beso from most other restaurants. The fish that is used by Beso is mostly imported from Alaska on a daily basis and it is all Safe Harbor®, so you know it is the highest quality and the freshness is unparalleled. If you have a group that enjoys fresh shellfish, the Shellfish Tower is something you must experience. Tower is the appropriate word considering the volume of seafood that you are served. The tower comes with chilled Maine Lobster, jumbo shrimp, oysters, clams, mussels and ceviche. Not only do you get enough food that you might not have to order anything else, it is so fresh you might think that you pulled it in from the ocean yourself. As amazing as the Shellfish Tower is, the Seared Tuna Adobo is even better. I would have to say that this is the best item on the menu. The tuna is seared to perfection and comes out slightly warm and served with a side of jumbo lumb crab. Both of those dishes by themselves are good, but somehow when they are brought together, you get a flavor explosion. These two items really compliment each other perfectly and the brown butter vinaigrette provides just enough added flavor to make the dish complete.
Beso also has a fabulous assortment of steaks and chops that are all Harris Ranch Natural Black Angus Beef, but if you are looking for one that is going to give you the Beso experience you must try the Chili Rubbed Skirt Steak. Not only is the Skirt Steak an incredibly tender piece of meat and large enough that you are going to struggle to finish it, but it is also marinated with Eva's family recipe, which gives the steak a nice little kick, while not overpowering the steak.
Beso has some tasty desserts to finish off your dinner with, including Churros that come with caramel sauce and Chantilly cream, but don’t miss out on the opportunity to try the Plantains Con Crème. This is one of those decadent desserts that is so rich that one bite could do you in, yet it is so tasty that you can’t put your fork down.
The restaurant is just as stunning as its owner, whether you are cozying up to the bar, relaxing in the leather booths or dining under the chandeliers that were handmade from the Swarovski curtain that was created for the 2009 Academy Awards.
"In general, just the opportunity to be in a development like CityCenter was a very different experience than what we have here in Hollywood. In Vegas, it was different...no holds-barred, bring your creativity," Eva stated. "We have browns and deep woods in Beso. And upstairs we have the theme of gold for the significance of luxury."
Beso is more than beauty and spectacular food, it is an example of what the future of restaurants hopefully will all look like. Beso was designed and developed to meet LEED certifications throughout CityCenter and this sustainable restaurant has a number of eco-friendly upgrades, which makes this a very "green" restaurant.
If all of the aforementioned was not enough, in return for one of the best meals in Vegas, you also get free entrance into Eve the Nightclub, which is located right above Beso and it is also owned by Eva. Once you make your way to Eve, the one common thread you will find is amazing service. The wait staff was right on with every recommendation and always went the extra mile for the diners of Beso. The management was also fabulous, as they were not in hiding as you find in most restaurants. They were circulating throughout the night, making sure everyone was happy and that the restaurant was running smoothly.
If you have not been to CityCenter, Beso gives you an excuse to stop by and experience it. At the same time Beso gives you the perfect spot to take you from the evening hours to the early morning. You will not find a more pleasurable time than enjoying a great meal at Beso and then hopping upstairs to enjoy Eve the Nightclub, which you will find is on par with any club in Vegas.
