The story of Spain’s journey to distinguish their champagne is a long and winding tale. Spanish sparkling wine was first made in 1851, and can be traced back to Josep Raventós's travels through Europe in the 1860s, where he was promoting still wines. His visits to Champagne inspired him to persue the possibility that a Spanish wine could be made using the same traditional method. The initial sparkling wine was born in 1872.
Catalan cava producers pioneered a significant technological invention in sparkling wine called the gyropallet, a device which replaced hand riddling, a process where the lees are consolidated in the neck of the bottle prior to disgorgement and corking.
